1. Bajeko Sekuwa — Aurora
The Himalayan grill chain's Aurora branch: sekuwa skewers, kothey momo, and dal bhat, Tue–Sun 11am–9:30pm (closed Mondays). Self-described as Nepalese & Indian cuisine.

5. Mantra Cafe — Denver
Nepali-Indian fusion on Broadway with late-night weekend hours (Fri–Sat till 2am). Momos, biryani, tandoori platters.
